Ingredients: - ½ cup grated coconut, 2 garlic flakes, ½ lemon’s juice, 1 green chilly, ½ teaspoon sugar, 1 medium sized onion, 1 pinch cumin seeds, ¼ teaspoon salt and ¾ cup coriander leaves.

Preparation time : - 2 minutes     Serves : - 3

HOW TO PREPARE: - Take a blender and add all the ingredients. Blend it till it becomes a fine paste. If it’s too thick you may have to add a little water. Ensure that the paste does not become watery. Transfer to a glass bowl and serve.

Ingredients : - 6 half ripe mangoes, 10 garlic flakes, 1 cup light brown sugar, 1 cup cider vinegar, 1 inch ginger, 1 teaspoon dried red chilly powder and salt to taste.

Preparation time : - 45 minutes     Serves : - 2

HOW TO PREPARE : - Wash the mangoes, peel them and then cut it into thin slices. Peel the garlic flakes, ginger and cut them into thin slices too. Now take a thick bottomed pan and put in all the ingredients. Don’t add any water but stir well. Simmer and cook for 40 minutes. Keep stirring at regular intervals so that the ingredients don’t stick to the bottom. Turn of the flame and set it aside. Once it’s cool serve. This dish goes well with curd rice.

Ingredients : - 1 bunch mint leaves, 3 garlic flakes, 3 green chillies, ½ teaspoon tamarind paste, 1 ½ teaspoon sugar and salt to taste.

Preparation time : - 5 minutes     Serves : - 2

HOW TO PREPARE : - Wash the mint leaves and then assort it. Ensure you only have the leaves and the soft stems. Now take a blender and put the mint in. Grind it coarsely. Mint tends to give out a lot of water and so remove from the blender and squeeze out all the extra water. Now put in only the pudina pulp and add the sugar, garlic, green chillies, tamarind paste and salt to taste. Blend all these ingredients together till it makes a fine paste. Apply on bread and serve as sandwiches.
