Kashmiri fish
Ingredients : – 500 grams pomfret, 2 tablespoons chopped coriander, 1 teaspoon garam masala(hot spice mix), 2 cloves, 2 teaspoons coriander powder, 1 teaspoon cumin seeds, 2 teaspoons grated ginger, 2 cups curd(yoghurt), 4 green chillies, 1 cup water, 1 pinch turmeric, 1 pinch asafoetida, 3 tablespoons ghee(clarified butter) and salt to taste.
Preparation time : – 30 minutes Serves : – 2
Kashmiri fish.HOW TO PREPARE : – Slit the green chillies and remove all the seeds. Take the curd and add a little salt. Beat the curd to fine state. Take the fish slices and apply some turmeric and salt on it. Let it marinate for five minutes. Now take a pan and pour a little bit ghee and fry the fishes till they are golden brown. Remove onto some newspaper and pat dry all the extra oil. Now heat the remaining ghee in a pan. When the ghee begins bubbling add the cumin seeds. Let it crackle and sauté till they are golden brown. Now add the ginger, asafoetida and cloves and sauté briefly. Simmer and slowly pour in the curd. Cook till the curd becomes a reddish brown and then add the coriander powder. Mix well and then put the fish slices. Now pour the water and sprinkle salt to taste. Bring to boil and then simmer, cover and cook for 20 minutes or till the fish is ¾ th cooked. Add the green chillies, garam masala, coriander leaves and stir well. Cook covered for another ten minutes or till the fish is cooked and the gravy is as thick as you want. Remove from flame and keep it covered till you serve -
Bhara hua machhi
Ingredients : – 4 medium sized herring fish, 1 cup boiled and mashed potatoes, 1 onion, 1 tablespoon ginger garlic paste, 2 green chillies, 1 tablespoon soft fresh bead crumbs, ¾ th cup besan, 1 teaspoon vinegar, 1 tablespoon lemon juice, 1 tablespoon chopped coriander, 1 teaspoon cumin seeds, ¼ cup butter, oil for deep frying and salt to taste.
Preparation time : – 20 minutes Serves : – 2
HOW TO PREPARE : – Finely chop the onion and green chillies. Now take a frying pan and put the butter. When the butter begins bubbling add the onions and sauté till golden brown. Add the ginger, garlic, green chillies, cumin seeds, salt and coriander. Sauté till the raw smell leaves and aroma begins to arise. Turn of the flame and add the mashed potatoes, lemon juice and vinegar. Mix it all up nicely and set it aside. Now wash and clean the fish very nicely. Stuff the fish with the potato mixture. Take a bowl and add the besan (gram flour), bread crumbs and pour water just enough to make a batter. The batter must be watery. Now take the stuffed fish and dip it in the batter and then deep fry in hot oil. Garnish with lettuce leaves, lemon wedges and chopped coriander leaves and serve

Fish Cutlet Recipes
Ingredients : –200 grams boneless fish, 3 onions, 3 small potatoes, 5 big garlic flakes, 2 inches ginger, 4 green chillies, 1 teaspoon pepper powder, 2 teaspoons garam masala, 3 eggs, ½ cup bread crumbs, 1 tablespoon chopped coriander leaves, oil for frying and salt to taste.
Preparation time : –25 minutes
Serves : –2
HOW TO PREPARE : – Boil the fish flesh with a little salt and keep it aside. Boil the potatoes and mash them. Finely chop the green chillies, ginger, garlic and onion and keep it aside. Now take a pan and pour 4 tablespoons oil and bring to heat. When the oil is very hot add the onions, ginger, garlic and green chillies and sauté till the onions are golden brown. Now add the boiled fish and cook till all the water evaporates and it becomes a dry mixture. Sprinkle the pepper powder and garam masala (hot spice mix). Mix well and then add the mashed potatoes and cook till an aroma begins to rise. Turn of the flame and add the coriander leaves and salt to taste. Now mix it all up and make small balls of this mixture and set it aside. Take a bowl and beat the eggs. In another plate spread the powdered bread crumbs. Now take the small balls and make it a little flat like a patty and dip it in the egg and then roll it in the bread crumbs, so that each cutlet is coated evenly on all sides. Heat oil for deep frying in a frying pan and then deep fry all the cutlets. Serve with some tomato sauce.
