  • Egg sandwiches

    Ingredients: – 4 slices bread, 4 teaspoons butter, 2 hard boiled eggs, 1 small onion, ½ capsicum, ½ potato boiled, 1 tablespoon cheese, 1 tablespoon chopped coriander leaves, 3 tablespoons mayonnaise, 1 green chilly, pepper and salt to taste.

    Preparation time : – 5 minutes Serves : – 2

    HOW TO PREPARE: – Finely chop the eggs, onion, green chilly, capsicum and potato each separately and keep it aside. Take a bowl and add all the ingredients except the bread and butter. Mix it up well and keep aside. Take two slices of bread and apply one teaspoon butter on each. Then place the egg mixture on both the slices equally and spread it all over evenly. Apply butter on the remaining two bread slices and place it over the egg mixture to make a sandwich. Cut it into half and serve with tomato and pudina sauce.

    Egg sandwich

    Ingredients: – 2 eggs, 4 slices bread, 2 cubes cheese, 2 tablespoons butter, 2 tablespoons tomato sauce, 1 teaspoon oil, pepper and salt to taste.

    Preparation time : – 7 minutes Serves : – 2

    HOW TO PREPARE: – Take a frying pan and heat up the oil. When the oil is very hot add the previously beaten eggs. Sprinkle pepper and salt to taste. Add the grated cheese and mix till it blends well. When the eggs are done remove from flame. Pour in two tablespoons tomato sauce and mix it all up. Now take a slice of bread and apply ½ tablespoon butter on one side. Then place half the egg mixture on the bread. Now apply half a tablespoon butter on another side and cover it. Do the same for the remaining ingredients and serve.

    Bombay toast

    Ingredients : – 4 slices bread, 1 egg, ½ cup milk, ½ teaspoon pepper, 4 teaspoons oil and salt to taste.

    Preparation time :- 6 minutes Serves : – 2

    HOW TO PREPARE : – Take a bowl and add the egg, pepper, salt and milk. Beat all the ingredients till nice and fluffy. Now take a non-stick tava and bring to heat. When it is hot enough dip two slices of bread in the egg mixture nicely and place it on the tava. Pour ½ teaspoon oil for each slice and then cook for half a minute. Then flip it over and pour oil on that side too. Cook each slice like this till done and serve hot for breakfast.

  • OMLETTE DOSA

    Ingredients: – 2 serving spoons dosa batter, 2 eggs, 1 onion, 2 tablespoon chopped coriander, ½ teaspoon red chilly powder, 2 teaspoons oil and salt to taste.

    Preparation time : – 5 minutes Serves : – 2

    HOW TO PREPARE: – Take a bowl and add the egg. Finely chop the onion and add that to the egg. Put in the coriander, red chilly powder and salt. Beat the egg well till all the ingredients blend well and there should be no lumps. Take a no-stick tava and bring to heat. When the tava is hot add one serving spoon dosa batter. Spread it all around the tava with a flat bottomed round spoon. Then pour half the egg mixture and with a flat spoon spread it all over the dosa. Pour one teaspoon oil around the dosa and cook for a minute or till the egg is done. Now flip over and cook for 30 seconds and remove from flame. Serve hot with some onion chutney. Do the same with the remaining ingredients.

    Egg dosa

    Ingredients : – Two serving spoons dosa batter, 2 eggs, two tablespoons oil, pepper and salt to taste.

    Preparation time :- 4 minutes Serves : – 2

    HOW TO PREPARE : – Take a non-stick tava and bring to heat. When it is very hot pour 1 serving spoon dosa batter and with a flat round big spoon spread out the batter in a big circle. Then take the egg and break it slowly on the dosa in such a way that you don’t break the yolk. Now with a flat spoon spread out the white all over the dosa slowly and carefully. Sprinkle pepper and salt to taste. Pour one tablespoon all around the dosa. Cook for a minute or till the egg is done. Slowly and carefully remove from flame and serve with some coconut chutney. Do the same with the remaining ingredients.

    Curried omlette

    Ingredients : – 3 eggs, 2 onions, 1 tomato, 4 green chillies, 1 big bunch of coriander leaves, 2 tablespoons grated coconut, ½ teaspoon cumin seeds, 1 teaspoon red chilly powder, 1 teaspoon coriander powder, ½ teaspoon garam masala(hot spice mix), ½ teaspoon turmeric, 1 teaspoon vinegar, ¼ teaspoon pepper, 3 tablespoons oil and salt to taste.

    Preparation time : – 25 minutes Serves : – 2

    HOW TO PREPARE
    : – Finely chop the onions, green chillies and tomato each separately and keep it aside. Now take a bowl and add the eggs, ½ the chopped onions, ½ the chopped green chillies, pepper, salt to taste and one teaspoon chopped coriander leaves. Now with an egg beater or a fork beat the eggs well till all the ingredients have blended well. Take a tava and apply oil on it and bring to heat. When it is very hot pour the egg mixture. Pour a teaspoon oil around the edges if required. When one side is done flip it over and do the other side too. Remove from heat and then cut it into 1 inch wide strips. Take a blender and add the grated coconut and all the spices. Add a little water if needed and a make a fine paste. Now take a pan and heat up the remaining oil. When the oil is hot add the remaining onions and sauté till golden brown. Now add the freshly ground paste and then sauté till the raw smell leaves. Put in the remaining green chillies and tomatoes and sauté till the oil begins to leave the edges of the pan. Pour in the vinegar, 2 cups water and sprinkle salt to taste. Bring it to boil and then simmer and cook for ten minutes. Add the omlette strips and cook for another three minutes. Garnish with chopped coriander leaves and serve.

    Ingredients: – 4 eggs hard boiled, 1 egg, 2 onions, 1 bell pepper, 1 tablespoon ginger paste, 3 cups chicken stock, 2 tablespoons red chilly powder, ½ cup flour, ¼ cup corn flakes, 4 tablespoons butter, oil for frying and salt to taste.

    Preparation time : – 40 minutes Serves : – 2

    HOW TO PREPARE: – Take a bowl and put in the raw egg and beat it. Now to this beaten egg add the corn flakes, grated boiled eggs, pepper, salt and flour. Mix it all well and make a smooth dough and make balls from it. Now take a frying pan and pour oil enough for frying. Then fry these balls in well heated oil until the balls are crisp and a dark brown. Take another pan and heat the butter and when it starts bubbling add the chopped onions and bell pepper. Fry until golden brown and then add the red chilly powder, ginger, chicken stock and salt to taste. Mix it all up and cook on a low flame for half an hour. Then add the egg balls and cook till the gravy is as thick as you want. Remove from flame garnish with fried onions, cashew nuts and fresh coriander leaves and serve.

    Egg biryani

    Ingredients : – 4 eggs hard boiled, 1 tablespoon chopped coriander leaves, ½ teaspoon garam masala(hot spice mix), 1 ½ cups warm water, 1 cup basmati rice(long grain), ¼ teaspoon red chilly powder, ¼ teaspoon turmeric, 2 green cardamoms, 1 brown cardamom, ½ inch cinnamon, 1 bay leaf, 2 garlic flakes, 1 medium sized onion, ¼ cup ghee (clarified butter) or oil and salt to taste.

    Preparation time :- 25 minutes Serves : – 2

    HOW TO PREPARE : – Finely chop the onion and crush the garlic. Soak the rice in water for ten minutes at least. Drain all the water and keep it aside. Take a frying pan and heat 3 tablespoons ghee. When the ghee begins bubbling add the onions and garlic and sauté till golden brown. Then add the bay leaf, cinnamon, black and green cardamoms. Sauté briefly and add the red chilly powder and turmeric and mix well. Take the boiled eggs and with the help of a fork make holes on all side. Add the eggs to the masala and add rice. Stir very carefully and ensure that you don’t break the eggs. Pour in the water and bring to boil. When it begins boiling add salt to taste. Cook till all the water is absorbed on a low flame. Sprinkle the garam masala and mix once. Garnish with tomato slices and coriander leaves and serve.

    Nurgisi andaa kofta

    Ingredients : – 4 eggs hard boiled, 2 bread slices, 1 onion, 2 skinned tomatoes, 1 teaspoon onion paste, 1 teaspoon green chilly paste, 1 teaspoon red chilly powder, ½ teaspoon garam masala(hot spice mix), few curry leaves, 1 tablespoon ghee (clarified butter) and salt and pepper to taste.

    Preparation time : – 35 minutes Serves : – 2

    HOW TO PREPARE : – Peel the eggs and then cut it into half horizontally. Remove the yolk and keep them aside. Soak the bread slices in water for two minutes. Remove from the water and squeeze out all the water. Make a powder of the bread and keep it in a big bowl. To this add the egg yolks, butter, onion paste, green chilly paste and salt to taste. Mix it all up until all the ingredients blend into one. Now take the egg whites and stuff the area of the yolks with the mixture we just made. Take a pan and add a little bit ghee. When the ghee begins bubbling add the chopped onions, tomatoes, curry leaves, red chilly powder, garam masala (hot spice mix), pepper and salt. Cook until the oil begins to leave the edges of the pan. Then add the eggs and cook for another ten minutes. Garnish with coriander leaves and butter flakes and serve.
