    Kerala Fish Curry

    Ingredients : Fish or Prawns – 2 lbs, Corriander pwd. – 1 tsp, Red Chillies – 6 nos, Turmeric – 1 tsp, Onions – 2, Coconut – 1, Garlic – 6 flakes, tamarind – 1 small lump. Salt – to taste, Ghee

    Preparation: Grate coconut & extract the milk from half of it . Grind coriander , chillies , turmeric , 1 onion and garlic to a paste . Soak the tamarind in water and strain the juice from it. Brown the sliced onion in ghee and add the masala & the remaining half of the grated coconut. Fry for 5 minutes on brisk fire . Add the coconut milk and the fish or prawns ( whatever u are using ) & simmer till fish is tender . Add tamarind juice and bring to a boil once .

    Tuna Curry

    Ingredients : 1-2 tablespoons sunflower oil, 1 level dessert spoon black mustard seeds, 1 level dessert spoon cumin seeds, 1 small/medium onion (finely chopped), 4 green chillies (finely chopped – leave the seeds in), 4 cloves of garlic (finely chopped), ¼ teaspoon turmeric, ¼ teaspoon extra hot chilli powder (or to taste), 1 teaspoon coriander powder, 4 fresh tomatoes (finely chopped), 2 x 200g tins of tuna (drained), 1 tablespoon chopped fresh coriande, Squirt of lemon juice

    Preparation : Heat oil and add mustard seeds and cumin seeds and let them sizzle a bit. Add onion and fry until brown. (It is important you wait until it browns – it makes a huge difference to the taste of the curry.), Add the garlic, chillies, turmeric, chilli powder, coriander powder and tomatoes. Cook for about 5 minutes. Add tuna, mix in well and cook for another 5 minutes. Add coriander and lemon juice. Serve with tortilla wraps. (Tear off bits of the wraps and use them to pick up the curry.)

    Ingredients: – 2 eggs, 1 small bunch palak(spinach), 1 small onion, 1 small tomato, 1 big green chilly, ¼ teaspoon grated ginger, 2 garlic cloves, 1 tablespoon oil and salt to taste.

    Preparation time : – 17 minutes Serves : – 2

    HOW TO PREPARE: – Take a bowl and beat the eggs with ¼ teaspoon salt. Now take a tava and apply some oil on it. When the oil is very hot pour the egg on the tava and roll the tava so that the egg spreads over evenly. When one side is done flip over and let the other side get cooked too. Remove from flame and cut the omlette into small squares. Take a pressure cooker and put in only the leafy part of the spinach. Add a little water and salt and cook for a whistle or two. Remove from the cooker and drain completely and let it cool. When it is cool put it in a blender with the green chilly, garlic and grated ginger and make a fine paste. Now take a frying pan and heat up the remaining oil. When it is very hot add the chopped onions and sauté till they are deep brown add the tomatoes and the spinach paste. Sauté till the oil begins to leave the edges of the pan. When the gravy is as thick as you want, add the omlette squares and cook for another two minutes so that the taste of the gravy gets into the omlette too. Remove from flame and serve with a little fresh cream or butter.

    Egg Manchurian

    Ingredients : – 6 eggs hard boiled, 3 onions, 6 green chillies, 1 tablespoon corn flour, 1 tablespoon vinegar, 2 tablespoons soya sauce, ¼ tablespoon sugar, oil for frying and salt to taste.

    Preparation time :- 12 minutes Serves : – 2

    HOW TO PREPARE
    : – Slice the onions length wise into nice thick pieces. Slit the green chillies into half and keep it aside. Take a small bowl and add the corn flour. Add very little water and make a smooth paste. Now take a frying pan and heat three tablespoons oil. When the oil is very hot add the onions and sauté till golden brown. Now add the corn flour paste, soya sauce, vinegar, sugar and salt to taste and mix it all well. Now sauté till an aroma begins to rise. Now cut the eggs into halves length wise and add it to the paste. Add the green chillies too and bring to boil. Simmer and cook for two minutes. Remove from heat and serve.

    Ingredients: – 4 eggs, 1 capsicum, 1 onion, 1 potato, 6 button mushrooms, 2 tablespoons oil and salt and pepper to taste.

    Preparation time : – 20 minutes Serves : – 2

    HOW TO PREPARE: – Finely slice the onions, capsicum and mushrooms and keep it aside. Peel the potato and cut it into roundels. Take a bowl and add the eggs and beat till it’s nice and fluffy. Take a frying pan and heat the oil. When the oil is very hot add the onions, capsicum, potato and mushrooms each separately. While frying fry on a high flame and sprinkle a little water to avoid roasting them. If fried properly the colour of the vegetables will not change. Now add pepper and salt to the beaten eggs and beat it once more. Take a casserole or an oven proof glass bowl and smear it with oil all over. Now lay in a layer of capsicum. Then put a layer of potatoes over it. Next layer it with the mushrooms and then the onions. Now pour the eggs over this as the last layer. Sprinkle pepper and salt and then cook in a preheated oven till the eggs are done. Remove from the oven and while serving put the spoon right in so that you get all the layers while serving. Serve with bread or stuff it into chapattis.

    Pattani Mutai curry

    Ingredients : – 5 eggs hard boiled, ¾ cup peas, 3 onions, 3 green chillies, 2 tomatoes, 6 garlic flakes, 1 inch cinnamon, 2 cardamoms, 2 cloves, 1 bay leaf, 4 tablespoons oil and salt to taste.

    Preparation time :- 10 minutes Serves : – 2

    HOW TO PREPARE : – Finely chop the onions, tomatoes and green chillies each separately and keep it aside. Now cut the boiled eggs into halves and keep that aside too. Take a frying pan and heat up the oil. When the oil is nice and hot add the cloves, cinnamon, cardamom, bay leaf, green chillies and crushed garlic and sauté for a minute. When the aroma begins to rise add the onions and sauté till golden brown. Now put in the tomato and peas and cook till the peas are soft and the oil begins to leave the edges of the pan. Now add the eggs and cook for a minute. Be very cautious while stirring so that you don’t break the eggs. Remove from flame and garnish with chopped coriander and serve.

    Special mutai

    Ingredients : – 3 eggs hard boiled, 1 big onion, 1 small tomato, ¾ tablespoon chopped coriander leaves, 2 tablespoons Bengal gram flour, 1 teaspoon chilly powder, 1 ½ teaspoon coriander powder, 1 pinch turmeric, 1 teaspoon cumin powder, ¾ teaspoon garam masala(hot spice mix), 2 tablespoons oil and salt to taste.

    Preparation time : – 12 minutes Serves : – 2

    HOW TO PREPARE : – Make slits on all side of the egg and keep it aside. Finely chop the onion and tomato each separately. Now take a small bowl and add all the spices. Pour in a teaspoon or t6wo of water and mix all the spices to make a nice paste. Now take a pan and heat the oil. When the oil is very hot add the onions and fry till they are a deep brown. Put in the gram flour and sauté till the gram flour is well fried and browned. Add the freshly made masala paste and fry till the raw smell leaves and an aroma begins to rise. Put in the tomato, coriander leaves and eggs and mix gently. Pour in one cup water and stir without breaking the eggs. Let it boil, then cover, simmer and cook for another five minutes. Remove from flame and garnish with fried cashew nuts and butter flakes and serve.
