Stuffed paneer
Stuffed paneer
Ingredients : – 6 large tomatoes, 2 medium sized potatoes, 1/2 cup green peas, 1 cup grated paneer, 1 teaspoon red chilly powder, 1 pinch turmeric, 1/2 teaspoon garam masala powder, 1/4 teaspoon mango powder,, 1/2 teaspoon mustard, 1/2teaspoon cumin seeds, 1/2 teaspoon aniseed(saunf), 3 table spoons oil and salt to taste.Preparation time : – 10 minutes    Serves : – 2
HOW TO PREPARE: – Boil the potatoes, peel them and mash them. Take a frying pan and pour 1 tablespoon oil. Bring to heat and add the mustard let it crackle. Follow this with the aniseed and cumin seeds, sauté till they turn golden brown. Add the turmeric, red chilly powder, garam masala (hot spice mix) and salt to taste. Put in the mashed potatoes and green peas and cook briefly and remove from flame. Add the grated paneer to the mixture and mix it all up. Cut the top of tomatoes and with the help of a spoon scoop out the entire pulp. Now fill each tomato with the mixture we just made. Now take another pan and pour the remaining oil and bring to heat. Now place all the tomatoes inside the pan and cook till the tomatoes are cooked. Garnish with fried cashews and fresh coriander and serve.
Paneer kofta
Ingredients : – 1 litre milk, 2 tablespoons lemon juice, 4 tablespoons besan, 1 large onion, 2 medium sized tomatoes, 1teaspoon turmeric powder, 2 green chillies, oil to deep fry and salt to taste.Preparation time : – 20 minutes    Serves : – 2
HOW TO PREPARE : – Finely chop the onion and tomato separately. Heat 600ml milk in a pan and when it’s boiling simmer and add the lemon juice and stir briefly. The milk will curdle and the whey will separate from the paneer (cottage cheese). Strain this and transfer the paneer to a thin white cloth and make a small bundle and let it hang for a while, this will drain out all the water completely. Now make dough of this paneer and make small balls. Then take the gram flower and coat each ball with the gram flour. Take a frying pan and pour oil enough for deep frying and fry these balls till they turn golden brown. Keep turning them so that they are fried evenly and properly. Take another pan and pour two tablespoons oil and bring to heat. Once it’s nicely heated up add the onions and sauté until they turn golden brown. Add turmeric and red chilly powder. Follow this with the tomatoes and sauté till the oil begins to leave the edges of the pan. Now add the milk that’s left and keep stirring until it boils. Let it boil for about five minutes and then add the paneer balls and cook for another two minutes.

Mushroom Dishes
QUICK MUSHROOM
Ingredients: – 10 medium sized mushrooms, 2 medium sized onions,2 table spoons oil, 1 teaspoon pepper and salt to taste.Preparation time : – 3 minutes    Serves : – 2
HOW TO PREPARE: – Finely cut the onions and the mushroom. Take a frying pan and add the oil and bring to heat. Once the oil is hot add the onions and fry for 30 seconds. Then add the mushrooms and cook on a low flame for three minutes. Stir well. Put in the pepper and salt stir again and remove from flame. Garnish with a little lemon juice and serve.
MATTAR MUSHROOM
Ingredients : – 250gms mattar(peas), 10 medium sized mushrooms, 2 big onions, 2 medium sized tomatoes, 1 teaspoon turmeric, 2 green chillies, 2 tablespoons oil, 1 pinch cumin seeds, butter and salt to taste.Preparation time : – 20 minutes    Serves : – 2
HOW TO PREPARE : – Cut the mushroom into little pieces. Grate the onions. Blend the tomatoes, chillies, turmeric and keep it aside. Take a pressure pan and pour the oil. Let it come to heat and add the cumin seeds. After they turn golden brown add the grated onions. Sauté till the onions turn golden brown. Then add the tomato paste and cook until the raw smell leaves. The tomatoes will then begin giving out oil. Add the mushroom and mattar. Stir well. Add a little water and bring to boil. Once its boiling add the salt stir well and close the pan. Keep it on a low flame for about ten minutes or for two whistles. If you want it to be dry then after opening the pressure pan, keep it on the stove and keep stirring till the water reduces and it becomes dry. Garnish with coriander or grated butter and serve.
JHATPAT MUSHROOM
Ingredients : – 200 grams button mushroom, 1 medium sized onion, 1/2 tablespoon ginger garlic paste, 3 green chillies, 1/2 teaspoon crushed black pepper, 1 pinch turmeric, 1 pinch garam masala (hot spice mix), 1/2 teaspoon dry mint powder, 1/2 teaspoon kasoori methi (dried fenugreek leaves) powder, 1 teaspoon cream, 1 teaspoon lime juice, 2 tablespoons oil and salt to taste.Preparation time : – 10 minutes    Serves : – 2
HOW TO PREPARE : – Cut the mushroom into quarters. Finely chop the onion. Take a frying pan and pour the oil. When it’s nice and hot, slit the chillies and add them. Put the ginger garlic paste too and sauté briefly. Next add the onions till they turn soft. Add the turmeric, garam masala, dry mint powder and kasoori methi. Sauté for a short while and add the mushroom and crushed pepper. Don’t add the pepper without the mushroom because it will make the onions taste bitter. Cook for two minutes and then add the salt. Cook for 6-7 minutes with a lid till the mushroom is cooked. Simmer and add the cream and lime juice. Remove from heat and keep it covered until its time to eat.

BITTER GOURD CHIPS
Ingredients: – 250 grams bitter gourd, 1 teaspoon turmeric, 2 teaspoons red chilly powder, Oil to deep fry and salt to taste.Preparation time : – 10 minutes    Serves : – 2
HOW TO PREPARE: – Cut the bitter gourd into thin circles. Add the turmeric, red chilly powder and salt. Add a little bit of water mix well and steam boil it. After it is steam boiled remove it and let it cool. Then deep fry it and roll it in paper so that the extra oil is sucked away. Serve it with rice and dal.
QUICK RAW BANANA CHIPS
Ingredients : – 250 grams raw bananas,1 teaspoon turmeric, 2 teaspoons red chilly powder, Oil to deep fry and salt to taste.Preparation time : – 10 minutes    Serves : – 2
HOW TO PREPARE : – Peel the raw bananas and them cut them into thin circles. Add the turmeric, red chilly powder and salt. Add a little bit of water mix well and steam boil it. After it is steam boiled remove it and let it cool. Then deep fry it and roll it in paper so that the extra oil is sucked away. serve it with rice and dal.
QUICK SOYA SNACK
Ingredients : – 500 grams soya beans, 1 medium sized onion, 2 green chillies, 2 table spoons oil, 1 pinch mustard, 1 pinch urad dal, few curry leaves,1 teaspoon lemon juice and salt to taste.Preparation time: – 10 minutes    Serves: – 2
HOW TO PREPARE: – Boil the soya beans with a little salt. Cut the onions and chilly into really tiny pieces. Take a frying pan and pour the oil and bring to heat. Add the urad dal and mustard and let it crackle. Then add the chilly, curry leaves and let it crackle. Add the onions and sauté till the onions turn soft and then add the soya. Add the salt and sauté. Pour the lemon juice and serve.
