  • Masala andaa

    Ingredients : – 4 eggs hardboiled, 2 onions, 1 tomato, 2 tablespoons gram flour, , 1 tablespoon chopped coriander leaves, 1 teaspoon red chilly powder, 2 teaspoons coriander powder, 1 teaspoon cumin powder, 1 teaspoon garam masala (hot spice mix), 1 pinch turmeric, 4 tablespoons oil and salt to taste.

    Preparation time : – 20 minutes     Serves : – 2

    HOW TO PREPARE : – Slice the onions and finely chop the tomatoes. Take the eggs and make three slits on its sides. Take a bowl and add the cumin powder, coriander powder, red chilly powder, turmeric, garam masala and mix it all up with as little water as possible. Take a frying pan and pour some oil. When the oil is hot add the onions and sauté till they are dark brown. Now put in the gram flour and sauté till that too is a light brown. Add the freshly made spices paste. Sauté for a minute and then add the tomatoes, coriander leaves. Keep cooking till an aroma begins to rise and the oil leaves the edges of the pan. Add 1 cup water and the slit eggs to the curry. Bring to a boil and add salt to taste. Simmer and cook till the curry reaches your desired level of thickness. Remove from heat and serve.

  • Pepper chicken

    Ingredients : – 500 grams chicken, 1 teaspoon ginger paste, 1 teaspoon garlic paste, ½ teaspoon garam masala(hot spice mix), 2 tablespoons tomato puree, 2 tablespoons freshly chopped coriander leaves, 1 tablespoon pepper corns coarsely powdered, few curry leaves, 2 tablespoons oil and salt to taste.

    Preparation time : – 20 minutes     Serves : – 2

    HOW TO PREPARE : – Make slits on all sides of the chicken and add pepper, salt, half of the ginger garlic, garam masala. Mix it all up and let it marinate for tow to three hours. Take a frying pan and heat half the oil. Now put in the chicken pieces and keep turning then over again and again. Cook the chicken till they are a light brown all over. Remove from the pan and pat dry the extra oil with some paper towels. Ensure that the pieces are kept warm. Now pour in the remaining oil in the same pan and add the curry leaves. Let it crackle and add the ginger garlic paste. Sauté for 30 seconds and add the tomato puree. Simmer and cook till the oil begins to leave the edges of the pan. Put in the chicken, marinade, coriander leaves and remaining garam masala. Pour in half a cup hot water, cover and cook on a low flame for 15 minutes or till the chicken is done. Garnish with fresh coriander leaves and freshly ground pepper and serve.

  • Fish roll

    Ingredients: – 500 grams lemon sole fish fillets, 2 small onions, 2 green chillies, ½ cup chopped coriander leaves, ½ teaspoon garam masala, 1 teaspoon red chilly powder, 1 cup milk, 3 eggs, 8 tablespoons bread crumbs, 3 tablespoons lemon juice, oil for frying and salt to taste

    Preparation time : – 20 minutes Serves : – 2

    Fish-roll.jpgHOW TO PREPARE: – wash the fish fillets and apply a little salt on it and set it aside. Beat the eggs in a bowl. Finely chop the onions, green chillies and keep it aside too. Take another bowl and 5 tablespoons bread crumbs, milk, red chilly powder, garam masala(hot spice mix), 1 tablespoon lemon juice, onions, green chillies, coriander, 2tablespoons beaten egg and salt to taste. Mix all these ingredients together nicely. Now take the fish fillet and pour a little lemon juice on it. Keep a little stuffing on one side and roll the fish fillet. Then dip it into the beaten egg and then roll it on the bread crumbs so that it is evenly coated with bread crumbs on all sides. Now take a frying pan and pour oil enough for shallow frying and fry the fillets till they are crisp and golden brown. Serve hot with plain white rice and any curry.
